Buttercream is my go to cupcake topping and it can be used in so many other recipes too. It is quite an old fashioned frosting and I remember using it when I first started baking with my mum when I was a child. I have adapted the original recipe we used then to make it much lighter; both in texture and in colour by using half butter and half white vegetable shortening and whipping them together thoroughly. When adding colour, it's best to use the gel variety as this doesn't alter the texture as much as liquid food colourings do. Having a buttercream which is lighter in colour, also helps to get a true colour without the buttery yellow affecting the result. Of all the frostings I've made, this is by far the easiest and most reliable for the beginner...

Here's a quick and easy way to make your own chocolate decorations for adding to cakes and desserts. Today I'm making iant sprinkles but you can use this technique to make your own designs by drawing or printing out your own shapes and tracing them in piped chocolate onto the baking paper.

Cream Cheese Frosting is a great frosting for a cake. It has a lovely background tang to its flavour and goes so well with carrot cake or any soft, lightly flavoured cake. I find, it’s always good to have a batch in the freezer so I tend to double this quantity in order to use half and store half so that next time I bake, the frosting is already done. It just needs to be brought back to room temperature. I will often pop it into an icing bag complete with nozzle and clipped at the other end then into an airtight bag to make it even easier to use once defrosted…
